The air space between hotel pans eliminates vacuum seal for fast drying. Flat edges and corners keep pans tight in the well, sealing in heat and cold to keep temperatures even. You also get a more comfortable grip and reduce the risk of spilled food from dropped pans. The coved interior corners are shaped to the spoon, making scooping easier while maximizing serving yield. While I am not a professional chef, I am somewhat of a cooking enthusiast. I attended a recent cooking class at a local culinary school and was introduced to these types of pans. There seem to be few types of commercial/professional cookware that crossover to the home kitchen; this is one that does nicely. I use this for just about everything from prep work for a recent pig roast to marinating meats. These pans go from the rack, to the refridgerator, to the grill/oven and back. They have numerous uses and stack well for storage. They clean easy in the sink or dishwasher. The thick steel holds up well to heavy use. The 4" depth address the majority of household needs.
