The SuperPerf perforated pizza disk can produce a more evenly baked crust by allowing air to circulate beneath the crust. Constructed of standard weight 18 gauge aluminum. Holes 3/8 inch diameter. NOTE: The edge of the disk and the edges of the holes are unfinished and may be sharp.

Perfect pizza crust attained with these disks. No longer does the crust stick to the peel when transfering into the oven (I allow my crust to rise for several hours on the peel, so nothing else permits a smooth slide). Large holes allow the dry heat of the stone to pass right through. Pizza will stick to these disks on the first baking after dishwasher cleaning, so I just scrub with a dishbrush and hang with my peel to dry. Darkening with repeated usage actually makes them more nonstick. (Posted on 1/31/2012)
