The ultra-low profile, portable countertop induction range from Vollrath is designed for use in light to medium duty front-of-the-house cooking. The 100 power levels with optimum power output to a wide variety of induction-ready cookware. With an enhanced troubleshooting display and 1-180 minute timer, this induction range is sure to be an asset in the kitchen! It has a variable speed knob for fast temperature adjustment. The Mirage Pro range has 1-100 power levels or °F/°C temperature level controls. The settings range from 80°F to 400°F with a low range for melting chocolate.
The case frame is made from heavy-duty, 18-gauge stainless steel with a ceramic top. The ceramic top is easily cleaned with a mild cleaner. This countertop range has a G4 engine with 4 IGBT switches for improved durability and temperature control. The range will display HOT when unit is turned off, if the cooking surface is still hot. Its rubber feet to prevent slipping of appliance.

Temperature is set in degrees. At 210 degrees F 5 quarts of potatoes and onions in 2 quarts of water is slow boiling in 10 minutes, without overheating pan and lowering temperature (I am 800 feet above sea level). 20 minutes later potatoes are done and not mushy. Fry with little splatter as overheating pan or griddle is not necessary.
A 20 amp dedicated power line is a must - nothing else on that circuit breaker - capeech!

Perfect for Chocolate Review by Terry
I purchased this unit several weeks ago to substitute for a double boiler when I'm working with chocolate because of the promise of low heat settings. I was not disappointed! This unit is very quiet (there is a low-level fan noise but it is not loud enough to be a bother) and it appears to be very well made; my feeling is that it should last a very long time. I've since discovered several other benefits, such as no flame marks on my cookware (I use All-Clad with this burner), precise temperature control (80 to 400 degrees F in 10 degree increments), and a timer function that will automatically turn the unit off at the end of my desired cooking time even if I get distracted. One of the best features is the ability to remove the pan from the burner for a few minutes and then, when the pan is placed back onto the burner, the unit will resume cooking at the same exact settings that were in use when the pan was removed. So far, this unit is everything I expected it to be and more. One word of caution: if you are considering purchasing this unit, be aware that the previous model did not have all the features of this unit, and the model number was the same except that there was no letter "P" at the end of the number. You should look for the "Mirage Pro", model 59500P, and this review applies only to that model. (Posted on 7/26/2011)
