InterMetro non-insulated heated holding and proofing cabinets are designed to hold hot, prepared food items at safe and proper serving temperatures; as well as proofing dough for consistency when baking. Ideal for operations that cook and/or bake product in batches. Thanks to its analog humidity control system, it helps keeping foods from drying up--extending the time they can be held. It also provides better control over dough when proofing.

A great feature about this holding and proofing cabinet is that it can be changed from holding mode to proofing mode, all with a simple flip of a switch. The individual analog controls give the user better accuracy when setting temperature and humidity levels. A thermostatically controlled, forced air heating system provide fast heat-up and recovery for those operations that are constantly opening and closing the cabinet. Even more features include:
