This non-insulated, versatile proofing/holding cabinet from Cres Cor can be used as proofer to produce quantities of uniformly raised dough or as a holding cabinet to keep prepared foods at serving temperatures. The powerful, yet efficient, heating system maintains the right combination of heat and humidity to properly proof or hold products. The 2000 watts of heat holds foods at up to 180°F (82°C); proofing with 1000 watts allows for temperatures of 80°F (26.5°C) to 95°F (35°C), with relative humidity of 95%. The cabinet's body is constructed of non-corrosive, Hi-Tensile aluminum with extruded frame fully welded for strength and ease of mobility.

The field reversible lexan door allows for viewing products. The door is standard with right-hand hinging and the perimeter door gasket minimizes heat loss. A magnetic latch secures the door during transport. Eleven sets of chrome-plated wire extruded universal angles accommodate a large variety of pan sizes on adjustable 1-1/2" centers. The cabinet's controls are accessible without opening the door; allowing adjustment without interrupting the proofing process. Its slanted control panel has an easy-to-read thermometer; entire power assembly is removable for cleaning and maintenance. Integral drip trough on the front keeps traffic area dry, safer. The holding cabinet has heavy duty 5" swivel casters, two with brakes, providing mobility when fully loaded.
