The Texas Department of Health code 229.217 to 229.219 States the following: Instruments and controls used for measuring, regulating, or recording temperatures, pH acidity, water activity, or other conditions that control or prevent the growth of undesirable microorganisms in food shall be accurate and in sufficient quantity for their designated uses. The instruments shall be operated, maintained, and calibrated according to the manufacturer directions (and properly maintained, and in sufficient quantity for their designated uses).
These plastic pH testing strips are about 2-1/2" l. x 1/4" w, and have the small testing piece on one of their ends. Instructions are simple and are on the label of every bottle. Acidity is measured on a pH scale of 0 to 14, with a neutral pH being 7. The pH is acidic if it is lower than 7. The more acidic, the lower the number on the scale. Most bacteria will not grow in acidic foods with a pH level below 4.6. Microorganisms thrive in a pH range above 4.6. That is why acidic foods, such as vinegar and citrus fruits, are not favorable foods for pathogenic bacteria to grow in. However, bacteria may survive in the food. Each strip will provide accurate pH acidity levels ranging from 3.0 to 6.0, and they rise in .5 increments.
